Some say that Turkish cuisine is among the best in
the world. Here is a tasty chicken dish to make at home. Now you
can whet your appetite for the delicious food you can sample on
your Mythic Travel tour.
- 3 1/2 lbs. stewing chicken
- 1 large onion, quartered
- salt and pepper to taste
- 8 cups water
- 3 1/2 shelled chopped walnuts
- 4 slices day-old white bread, torn into small pieces
- salt to taste
- 1 T minced onion
- 1 clove garlic, crushed
- 1 tsp paprika
- 1 C chicken broth
- 1 T salad oil
- 1 tsp paprika
Wash and place chicken, onion, salt and pepper in
saucepan with water. Bring to a boil, cook over medium heat until
chicken is tender. Remove chicken from saucepan and cool. Remove
skin and bones and cut meat into small strips. Set aside, reserve
the stock. Grind the walnuts. Remove crust of bread, soak in water
and squeeze dry. Mix with ground walnuts in a bowl. Add salt, minced
onion, garlic and paprika. Mix in blender. Add chicken broth gradually
until creamy in consistency. Place chicken on a serving platter,
toss gently with half of walnut sauce. Spread the rest of sauce
on top. Place oil in saucepan over low heat, add paprika and heat
for 1 minute. Trickle paprika dressing over the walnut sauce. Store
in refrigerator until just before serving.
